President's Dinner — March 29, 2014

The President’s Dinner was a smashing success, as always! Kudos to the fine chefs at Ernest’s — they truly outdid themselves.  If you couldn’t attend this year, you missed out. The night was filled with 5 courses of mushroom infused goodness (see photos below), great tales from our guest speaker Larry Evans, and plenty of […]

AMS Forum: Agaricus ID Help (1/1)

These were found in grass near a forested ravine in Edmonton. White with cream/tan shading on top. Dark pink turning brown gills. Ragged ring had brown topside. Stalk stained Brownish pink. In fridge overnight the stalk stain looks more yellowish. Agaricus edibility? Enough to know it doesn’t stain yellow at first?

AMS Forum: Birch Chaga (1/1)

I harvested some chaga at the Lac La Bische Great Foray. When I got home I cleaned it and started to cut it into chunks, much of the black outer portion was very soft with a lot of moisture, the inner core was normal. I was wondering if the soft black stuff is usable, it […]

AMS Forum: Mushroom 2 ID (1/1)

Thanks Candice. It wasn’t that small (about 2 inches across) and it definitely didn’t have gills or spongy pores like a bolete; the underside reminded me of polypores (kind of a tougher pore surface) and the orange colour on cutting was surprising. We did find Lactarius delicious in the forest, but this mushroom was definitely […]

AMS Forum: drying mushrooms (1/1)

If you leave them moist they will go bad in a hurry, salt may help. Dry them and they go black and do not rehydrate all that well. You end up grinding them for mushroom powder which is a waste when you can pickle them. Best way to eat leccinums in my mind and taste.

AMS Forum: King in the prairies (1/1)

My jaw hit the ground when I stopped near red deer at a conservation area. Besides the leccinum which was there in more abundance than I’ve ever seen before, I found a King Bolete! Surrounded by tall grass and aspens I nearly missed it! It’s excitibg what 7″ of rain in a week will do […]

AMS Forum: A Blewit (Clitocybe Nuda)? (1/1)

Maybe, Kinda….. Superficially it looks like a blewit. Right couloirs, shape, etc…. But check the spore colour, I notice a bit of a hairy ring on the stalk which mean it could be a cortinarius. Have a closer look for this and if it has a rusty brown spore print. That’s what you have. Lots […]
